FISH RECIPES

We are happy to share with fish retailers, wholesalers and just plain fish eaters, a small selection of the vast array of recipes we have at our disposal

Hot and cool medina fish
Ingredients

a portion of firm white fish
30gm Semolina
Raisins
Olive oil
Lime juice
Verstegen spicemix del mondo medina
Verstegen world grill indian mistery

Method:
Braise the semolina and leave to cool down.
Mix the raisins, olive oil and lime juice together with the semolina and flavour with spicemix del mondo
Rub the fish into the world grill and grill or bake
Tip: add extra fresh coriander.


Scampi Lissabon
400gm Scampi
Verstegen Spicemix del Mondo Piri-Piri
0.25L Verstegen Sauce Curry
Lemon juice (or orange juice)
200gm Chopped Courgette

Method:
Flavour the scampi with the spicemix and bake shortly in oli.
bake the courgette in olive oil and flavour with spicemix.
Heet the cuurysaus, add lemon juice and heet up with the scampi.
Serve with rice or pasta.
Tip: add fresh coriander or mint to the sauce.
